It is made using select raw sheep's milk from Spain, following a traditional recipe. The milk is thermized and unpasteurized to preserve all its natural and organoleptic properties. It acquires its characteristic color during the 11 months of maturation in the chambers. The result is a natural, unique, and healthy product that will delight our senses.

How to pair the Cheese in Olive Oil?
For an authentic experience, we recommend eating it by spearing each cheese cube with a toothpick to pick it up and savor it.
We recommend eating it with crusty bread or crackers like Picos Camperos. Pair it with grapes and, as with any good aged cheese, a sweet touch will be fantastic. You can achieve this by combining it with honey with nuts.
We also suggest a recipe for an authentic Spanish tapa: this cheese is perfect for creating your own skewers by spearing cheese cubes and membrillo quince paste on a toothpick.

As proof of the quality of the ingredients used to make this cheese, the rind is entirely edible, as it is made with olive oil.
Another secret to this outstanding cheese is the meticulous care taken in the production process. They select the final lactation milk from the sheep to carry out a traditional process of rennet, cutting, and pressing. Subsequently, the pressed cheese undergoes a brine bath and then moves to the maturation and aging chamber, where it will remain for an extended period.
The cheese is produced in the farmhouse "Dehesa Dos Hermanas", a farm located on a 1,500-hectare estate in Santa Bárbara de Casa (Huelva), the largest farm in Europe that has been active for several decades.
Here, the entire "production cycle" takes place, from planting a seed to producing one of the best sheep cheeses in Andalucia and the world. Moreover, this farm has been the first sheep farm to obtain the animal welfare certificate from AENOR, thanks to the care and technical innovations of Dehesa Dos Hermanas.

Our Red Wine Goat Cheese PDO Murcia by Palancares is one of the most classic Spanish cheeses. Made from goat’s milk and macerated in red wine from Monastrell variety grapes to give the rind the characteristic color and aroma.
Milk yield is high in Murcian goats. This goat breed has been selected over centuries and nowadays produces over 600 kg of milk per season. The milk has high average fat, protein and dry matter content, making it excellent for cheesemaking.
A cheese from Spain you should try, since it is the only European goat cheese soaked in red wine!
How to eat the "Murcia al Vino" cheese?
Ideal with crianza wines. It pairs perfectly with fresh grapes and a range of savory foods, such as Cantabrian anchovies and almonds.
Tasting notes
A pleasantly acid aroma and low salty flavor. The red wine in which the cheese is soaked during ripening, gives a flowery aroma and a pleasant aftertaste with reminiscences of goat’s milk and cream. The texture is soft, creamy and elastic. The rind is smooth, very light and a characteristic wine color. The paste is dense, compact when cut, ivory-colored and may have a few small holes.
